Most of us recognize the Recommended Dietary Allowance (RDA), which outlines essential nutrients like vitamins, minerals, proteins, fats, and carbohydrates. Yet, terms like ascorbic acid (Vitamin C), tocopherol (Vitamin E), and polyunsaturated fat remain unfamiliar to many. Between 2001 and 2019, packaged foods containing additives increased from 49.6% to 59.5%. Today, 99% of chemical additives enter our food supply without FDA oversight.
One alarming example is the recent crisis with Daily Harvest, a popular plant-based brand. More than 130 people were hospitalized due to an untested ingredient, tara flour, leading to severe stomach, liver, and gallbladder issues—including at least 39 gallbladder removals. Meanwhile, the FDA’s ability to monitor food safety is dwindling. In February 2025, nine of 29 FDA food safety reviewers were terminated, and in 2024 Congress rejected a $19 million request for a food additive monitoring program.
There’s a divide in public opinion, dare I say a civil war? Some believe in reducing government oversight and taking personal responsibility, while others trust regulatory agencies to protect consumers. Meanwhile, health professionals are required to communicate at a 6th-grade reading level, as mandated by the Plain Writing Act of 2010. Yet, many essential nutrients and medical terms are far beyond that vocabulary.
Take, for instance, my own experience with fundoplication. When I was 36, I had a fundoplication of the esophagus. I guarantee that only a few hundred sixth graders know where the esophagus is located, but none of them can describe fundoplication.
This presents a dilemma: how do we balance simplicity with critical health information?
